Roast Cauliflower Salad

Since sharing about this salad on my insta story I have been getting so many questions about it. I found this recipe on www.budgetbytes.com and slightly adapted it to my own preferences. I have been eating this every week for the past month. I has become one of my favourites and since I have been getting so many questions about it, I thought I would share it here for you.

Ingredients

​This recipe serves 4
  • 1 head of cauliflower
  • 1 head of broccoli
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 bunch of parsley

The Dressing
  • 1/2 cup of tahini
  • 1/2 cup of water
  • Lemon juice to taste
  • 1 tablespoon of garlic powder
  • 1 teaspoon of paprika
  • a hint of cayenne pepper

The Method

  1. Preheat oven to 200 degrees
  2. Cut up your cauliflower and broccoli into bite sized pieces.
  3. Coat your cauliflower and broccoli in olive oil, salt and pepper.
  4. Put in the oven for 45 minutes. Keep checking on them to make sure they don't burn.
  5. Cut up your parsely and put in a bowl
  6. Mix all of your dressing ingredients until combined
  7. Once the vegetables are cooked, mix all the ingredients together and serve.
